The Air is a Detroit-Sicilian frozen pizza made with wild yeast dough. It ferments for 72 hours, freezes raw at its peak, then bakes until the cheese edge caramelizes.

Bake it

From frozen. No thawing.

  1. 01Preheat to 425°F / 218°C.
  2. 02Unwrap straight from the freezer.
  3. 03Bake on the center rack, 16 to 18 minutes.
  4. 04Rest for 3 minutes, then cut into squares.

No. Bake from frozen. Thawing lets the dough go slack and you lose the crunch.
How long does it keep?
Until the best-by date on the box, as long as it stays frozen solid.
Can I refreeze it?
Not once it has fully thawed. Bake it right away or let us make it right.
